Ingredients
- For Sponge Cake:
- 6 large eggs, at room temperature
- 3/4 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- For Tiramisu Filling:
- 7 large egg yolks, at room temperature
- 1 cup granulated sugar
- 1 1/2 cups (12 ounces) mascarpone cheese, softened at room temperature (do not use cold cheese!)
- 2 cups heavy whipping cream
- 1 teaspoon vanilla extract (or beans scraped from 1 vanilla bean pod)
- For soaking sponge cake:
- 1 cup freshly brewed and cooled coffee or espresso
- 1/2 cup Frangelico or coffee liqueur
- dark cocoa powder, for dusting
