- 100g (3 1/2oz) caster sugar
- 2 eggs
- 100g (3 1/2oz) plain flour
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1 lemon, zested and juiced
- 1/2 tsp Sicilian lemon extract
- For the icing and topping
- 200ml (7fl oz) double cream
- 25g (1oz) icing sugar, sifted
- 150g (5oz) lemon curd
- 12 mini meringues
