Love these muffins they would be so good to make for breakfast or brunch to have with fruit maybe and a cup of coffee or juice , they also would be great if you need that grab and go breakfast as they will keep you going until lunch time , a great way of using up those over ripe bananas in a really yummy bake

I’m always skeptical if flourless gluten-free muffins are going to taste great. These mini muffins had that same great fluffy texture of muffins and tasted amazing. Once I popped one in my mouth I couldn’t stop. They’re also super easy to make, just combine the ingredients in a blender. Check out the quick video below:
Ingredients:
1 medium ripe banana, peeled
1 large egg
1/2 cup creamy peanut butter
3 tablespoons honey
1 tablespoon vanilla extract
1/4 teaspoon baking soda
pinch salt, optional and to taste (I used a pinch that was probably about 1/8 tsp)
1/2 cup mini semi-sweet chocolate chips, divided
