A Wonderful Hot Toddy Tea Cake

With it being National Hot Toddy Day I wanted to find you a recipe that wasn’t a drink but  a bake that has that wonderful hot toddy feel about it and I think I found it in this amazing tea cake recipe

Makes one 9″ x 5″ loaf

the hot toddy soak

  • 1ounce bourbon
  • 1tablespoon honey
  • 1/4of a whole lemon, juiced
  • 6ounces boiling water
  • 1tea bag (Yorkshire Gold is my favorite)
  • cup assorted dried fruits (I use raisins, currants, tart cherries, cranberries)



the cake

  • 1/2cup plain yogurt (I use nonfat Greek-style)
  • 1large whole egg
  • 1large egg yolk
  • 1/8cup reserved soaking liquid
  • 1 1/8cups all-purpose unbleached flour
  • 1cup granulated sugar
  • 1/4teaspoon kosher salt
  • 1teaspoon baking powder
  • Grated zest of one whole lemon
  • 4ounces unsalted butter (1 stick), cut into small chunks, room temperature
  • Confectioner’s sugar for the icing
