Today is National Raspberry Tart Day, so I wanted to find that perfect easy to make tart for you and I found this no bake white chocolate raspberry tart that seems just perfect

A great tart to make for any occasion .. I personally would make it for that dinner party as it is easy to make giving you more time making the rest of the meal

No-Bake White Chocolate Raspberry Tart

Ingredients 180g Oreos 75g unsalted butter, melted 180g white cooking chocolate 90ml heavy cream 300g fresh raspberries

Let’s get Cooking… For this recipe you’ll need 4 10cm mini tart tins with removable bottoms. Add Oreo cookies to a food processor and process until you reach a fine crumb. Add the butter and blitz until you have a damp, sandy mixture. Add about 2 tbsp to each tart tin and spread evenly across the sides of the tins pressing the Oreo crumb firmly with your fingers or the back of a spoon. Then add another tablespoon of mixture and press firmly in the bottom. Refrigerate for 30 min. To make white choc filling simply add white cooking chocolate and cream into a microwave safe bowl and microwave for 20 seconds at a time mixing each time until mixture is smooth. Fill each tart tin with white chocolate. Carefully place fresh raspberries on top and drizzle with white choc.

In a bowl, blend together 1 cup all-purpose flour, 1/2 cup butter, and 2 tbs confectioners’ sugar. Let the mixture chill for 1 hour. Pat chilled dough into a 9-inch tart pan. Bake at 375 °F for 10 minutes. Remove crust from the oven and cool.

Arrange 4 cups fresh raspberries in crust. Heat 8 ounce raspberry jam in microwave or bain-marie until it begins to boil. Pour jam over raspberries. Cover the tart and put in the fridge for about 1 hour before serving.
