When it comes to the weekend there is nothing I like better than to make some thing great that we can all enjoy as a family for breakfast as it is the best meal of the day at weekends I like to sit and enjoy it
My family are all over the place now as they have got older and moved away but when they are home the kitchen is the place to be and breakfast or brunch is the best meal of the day for us
So when I was looking around for something to make for my lot I came across this recipe for Banana Cinnamon Swirls and boy they are good .. so why not give them a go too and by all means share this recipe around
This recipe takes 45 minutes to make plus rising time and will make 9 swirls but of course if you have a hungry lot like mine I double the mix
100 G /40z strong white bread flour plus a little extra for dusting
100 g / 40z granary bread flour
1/2 tsp each salt and caster sugar ( superfine sugar)
1 1/2 tsp of dried yeast
2 1/2 floz warm milk
I egg , beaten
1 tbsp sunflower oil
50ml/ 2 fl oz water
25g/1oz unsalted butter , melted plus extra for greasing
2 very ripe medium sized bananas , thinly sliced
100 g /40z dried apricots , chopped
1 tsp ground cinnamon
50g/20z light muscovado sugar
2 tbsp clear honey
Icing sugar ( powered sugar) optional
- Combined both the flours, the salt caster sugar and the yeast in a bowl , make a hole in the middle . Mix the milk with half the egg and the oil , then stir in the water
- Pour the milky mixture into the hole and mix .Knead the dough for 10 minutes on a floured surface . Lift into a oiled bowl and cover, and leave to rise somewhere warm until doubled in size, then roll on a floured surface until about 30x 25 cm – use a ruler . brush with melted butter
- Mix together the bananas, apricots and cinnamon and the muscovado sugar, and scatter all over the dough. Roll up the dough from one of the long sides .Pinch the ends together .Cut into 9 pieces . Lift the slices whirly side into a buttered 20 cm squared baking pan cover and leave for 30 minutes to rise
- Heat the oven to 200C/180C FAN / GAS 6 , brush the leftover egg over the buns then bake for 20-25 minutes . brush the tops with the honey
- If you are like me and you love to glaze the swirls them make put some icing using the powered sugar mixed with water and drizzle over the buns .. my grandchildren love doing this
