- 1 1/2 tsp ground ginger
- 1 tsp bicarbonate of soda
- 40g (1 1/2oz) light brown muscovado sugar
- 50g (2oz) cold butter, cut into small cubes

- 40g (1 1/2oz) golden syrup
- For the cream cheese filling
- 100g (3 1/2oz) cream cheese
- 100g (3 1/2oz) butter, softened
- 200g (7oz) icing sugar, sieved
