How to Make Yummy Rosé Champagne Cupcakes

Preheat your oven to 180 degrees Celsius. Put all dry ingredients in a mixer and allow ingredients to mix for a couple of minutes at a low speed. Add softened butter and let it mix again until it resembles sand-like texture. In a separate bowl, whisk rose champagne, eggs, yogurt, oil and vanilla extract. Slowly add wet ingredients to dry ingredients; scrape the mixer bowl and mix for another 20 seconds. Split your batter into three. The first batter should be white. On the second batter, add one drop of pink food dye and the last one with three drops. Using a small ice cream scooper, start scooping the pink batter into your cupcake tin, followed by the light pink batter and then the white mixture. Make sure you don’t fill more than ¾ of the cupcake liners. Bake them for 20-25 minutes or until a toothpick inserted comes out clean. Allow them to cool completely before frosting. Prepare your buttercream frosting by adding the remaining two tablespoons of rose essence and yellow food dye and mix until well combined. To create the pink streaks, turn your piping bag inside out and use the end of a skewer to draw a thin line of the pink food dye. Using a 1M tip, pipe your cupcakes in a swirl motion or be more creative and decorate on your own. Sprinkle cupcakes with soft sugar pearls.
