INGREDIENTS:
5 eggs
6 tbsp flour
6 + 1 tbsp sugar
2 tbsp milk
2 oz white chocolate
2/5 cup heavy cream
DIRECTIONS:
First chop half of the white chocolate into small pieces. Melt the chocolate over a double boiler, making sure the bottom doesn’t touch the hot water. You can also use a microwave to melt the chocolate. Once it’s melted set it aside.
Microwave your milk for about 10 seconds to make it lukewarm. Beat egg whites until they are frothy. Add the sugar in thirds, beating in between each addition. Whip until stiff peaks.
Transfer 1/3 of the meringue mixture to a bowl. Sift in your flour and mix to combine. Add this to the rest of your meringue, gently folding until combined. Add warm milk at this point and mix it in.
Fold in your white chocolate until just blended.
Line a square pan with parchment paper and pour your cake batter on. Smooth out the surface and give it a few taps to get rid of any air bubbles. Bake for 15 to 20 minutes in a preheated oven at 320 degrees F. Set it aside to let it cool completely.
In the meantime, make the filling by combining the heavy cream and 1 tbsp sugar. Whip until stiff peaks. Chop the other half of the white chocolate finely and gently fold into the whipped cream. Spread onto your square cake and tightly roll up. Refrigerate for at least 3 hours or overnight. Slice and enjoy!
