Yield: 1 8×8 pan of barsFor the Apple Pie Filling:
3 cups chopped granny smith apples
1 tbsp cornstarch
1/2 tsp ground cinnamon
1/16 tsp salt
1 tbsp fresh lemon juice
1/2 cup water
2 tbsp Truvia brown sugar blendFor the dough:
4 cups all-purpose flour
3/4 cup Truvia brown sugar blend
1/4 tsp sea salt
1 tsp baking powder
1 cup cold unsalted butter, diced
1 egg, beaten
1/4 cup heavy cream
Directions:
To make the apple pie filling, combine the apples, cornstarch, cinnamon, salt, lemon juice, water, and Truvia brown sugar blend in a large skillet. Cook over medium high heat for 12-15 minutes, stirring frequently, until the apples soften. Set aside to cool.
Preheat the oven to 350 degrees F.
Next, prepare the dough. Place the flour, Truvia brown sugar blend, sea salt, and baking powder in a large bowl, and whisk to combine. Add the cold butter to the bowl, and use your fingertips to rub the butter into the flour, in order to break the butter down into small pieces that are coated in flour. Add in the egg, and toss around to distribute the moisture. Next, add in the heavy cream,
and toss the liquid around to moisten the dough further. At this point the dough might look crumbly but if you gather a handful with your fingers and press, it should hold together.Split the dough in half, and press one half of the dough down into the bottom of an 8×8 baking pan lined with parchment paper. Add all of the apple pie filling on top, and spread it evenly with a spatula or spoon. Crumble the remaining half of the dough on top.
Bake in the center of the oven for 50 minutes, until lightly golden on top.
Let the bars cool completely, then remove the bars from the pan and cut into squares. Enjoy!
