A Delicious Lemon Curd Tart

I was at a dinner party the other night at a friends house and for dessert she brought out this plate with the amazing looking tart on it , that look so delicious .. after cutting into it and placing a slice on everyone’s plate we all tuck in and the conversion stopped as each and everyone of us were enjoying this tart so much that we all stopped talking .. I just had to ask her at the end of the night if I could have the recipe and pass it on to you guys and she was so delighted …

So here I am passing this amazing tart recipe on to you so that you can make it and share it on to others too so we can all enjoy it

 

Lemon Curd Tart

 

Serve 8 people

Prep time 55 minutes

cooking time 15 -20 minutes

Ingredients

2 tsp cornflour ( cornstarch)

4 Lemons , zest and juice

4 eggs, beaten

22g/80z/ 1 cup  butter

175g/ 60z/ 3/4 cup caster sugar ( superfine sugar)

 For The pastry 

100 g/3 1/2 0z/ 1/2 cup butter , cubed

200g/70z/1/2 cup plain flour ( all purpose flour)

55g/20z/1/2 cup caster sugar ( superfine sugar)

1 egg, beaten

To Decorate 

I lemon , zest finely pared

2 slices of lemon

 

Method 

  • preheat the oven to 200°C (180°C fan) 390F/GAS 6
  • To make the pastry , rub the butter into the flour until they are bread crumb consistency  then add sugar and mix in ,  add the egg and bind the pastry together you may need a little water too
  • Wrap the pastry in up in wrap and chill in the fridge for about 30 mins, then roll out onto a floured surface
  • Use the pastry to line a 23cm (9in) loose bottomed tart tin and trim the edges , prick the pastry with a fork , line the pastry case with parchment paper and fill with beans or rice and bake for 10 minutes , then remove the parchment paper and bake for a further 8 minutes until crisp and golden brown
  • Meanwhile dissolve the cornflour(starch) in the lemon juice and put it into a saucepan with the rest of the ingredients ( eggs , sugar and butter ) , stir constantly over a medium heat to melt the sugar and butter , after about 6 /7 minutes the mixture should thicken , continue to stir until it starts to bubble , then spoon this mixture into the pastry case and level off with a knife
  • Leave to coll completely before decorating with the lemon zest and slices if you wish
