I am a big fan of Whoopie Pies. While I know that they’re not specifically a Christmas cookie, you can make them so just by garnishing them with crushed candy canes. I call them Peppermint Whoopie Pies. I think coloring the filling a pretty pink adds to their festive look as it matches the color of the candy canes.
