A Wonderful Berry Upside Down Cake

What a great cake to make is this berry upside down cake as it looks so delicious with that moist cake topped with juicy fruits of blueberries, raspberries although you could use whatever soft fruit you wish

I would love to have this cake with some cream or ice cream just to be that extra bit naughty or maybe warmed with some custard

INGREDIENTS

BERRY FILLING

1/2 cup 125 mL butter, melted
1 cup 250 mL packed brown sugar
4 cups 1 L blueberries, raspberries or a combination of both

CAKE

1 cup 250mL butter, softened
1 ¾ cups 425mL granulated sugar
3 eggs
1 tbsp 15mL lemon zest
2 tsp 10mL vanilla extract
3 1/3 cups 825mL

Robin Hood® Best for Cake & Pastry Flour
1 tbsp 15mL baking powder
¼ tsp 1mL salt
1 ½ cups 375mL milk

STREUSEL

½ cup 125 mL

Robin Hood® Oats
½ cup 125 mL packed brown sugar
¼ cup 50 mL

ROBIN HOOD® BEST FOR CAKE & PASTRY FLOUR

¼ cup 50 mL butter, melted
