These delicious blackberry muffins have a juicy fruit centre and are topped with a drizzle of sweet lemon icing, making them irresistible. Budding young bakers can help with the mixing and filling the centres with the surprise blackberry purée.

- 200g (7oz) self-raising flour
- 75g (2 1/2oz) porridge oats
- 75g (2 1/2oz) light brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp bicarbonate of soda
- 2 eggs, beaten
- 100ml (3 1/2fl oz) maple syrup
- 100ml (3 1/2fl oz) vegetable oil
- 100g (3 1/2oz) Greek-style yogurt
- 1 tsp vanilla essence
- 1 tbsp semi-skimmed milk
- 1 1/2 eating apples, peeled, cored and diced (about 150g (5 1/4oz) prepared fruit)
- 200g (7oz) blackberries
- 1 tbsp lemon juice, plus 2 tsp extra
- 2 tsp cornflour
- 60g icing sugar
