This Mixed Fruit Pie earned its maker the “best overall pie” honor at last year’s Minnesota State Fair (2014). The judges, a panel of food science professionals, chose the top pie based on appearance/color, texture/internal appearance, and flavor/aroma. In other words, it is all about execution…as in a perfect pie performance. Fancy that!

Fay says this pie crust recipe, handed down from her mother, is more durable and fool-proof than most. She says this comes from using vinegar, egg, and shortening. Our tasters referred to the crust as “flaky yet firm” and “a perfect compliment to the rich, fruity filling.”

Blueberry Rhubarb Strawberry Pie
Crust:
3 cups Gold Medal all-purpose flour (+ extra for rolling out dough)
1 teaspoon salt
2 teaspoon sugar + extra for sprinkling on top
1 cup vegetable shortening
1 egg
1 tablespoon white vinegar
5-6 tablespoons cold water
Filling:
2 cups fresh blueberries
3/4 cup chopped fresh rhubarb (1/2-inch pieces)
3/4 cup sliced fresh strawberries (1/4-inch thick)
1 cup sugar
1/3 cup flour
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
Dash of salt (1/16 teaspoon)
2 tablespoons butter, cut into thin pats
