Just had to share this with you as I think you will be interested , at my Grandson’s school they had a cake sale to raise money for a charity that is close to my heart so I made some cupcakes with his help ( he loved icing them ) to give to the school and believe me they went like hot cakes everyone wanted the recipe which surprised me as they were easy to make
So I wanted to pass the recipe on to you to make and to share on to others as they are amazingly good

Chocolate Glazed Brownie Cupcakes

Cupcakes
100g /3 1/2oz dark chocolate ( minimum 60% cocoa solids) chopped
75g /2 1/2oz / 3/4 cup unsweetened cocoa powder sifted
225g/8oz / 1 cup butter
450g/1lb/2 1/2 cups light brown sugar
4 large eggs
100g/ 3 1/2 oz/ 2/3 cup self raising flour
To Decorate
100g/ 3 1/2 oz / 1/2 cup dark chocolate ( minimum 60% cocoa solids) chopped
- Prepare the oven to 160°C ( 140 °C fan ) 325F/ gas 3 and then line a 12 hole cupcake tin with paper cases
- Melt the chocolate, cocoa and the butter together in a saucepan, then leave to cool
- Combine the sugar and the eggs in a bowl and whisk together for about 3 minutes or until the mixture is very light and fluffy , a electric mixer is good here if you have one
- Pour the chocolate mixture that has been cooling into the egg mixture and sieve in the flour then fold the mixture together until evenly mixed
- Divide the mixture evenly between the cake cases and then transfer to the oven and bake for 30-35 minutes or until set in the center
- Test them with a wooden toothpick , if it comes out clean then the cakes are cooked and are ready to come out of the oven
- Transfer the cupcakes onto a wire cooling rack to cool down
- Meanwhile melt the chocolate in a microwave or on the stove in a bowl over a pan of hot water , once melted leave to cool it will thicken
- check that your cupcakes are cooled down then dip the top of each cupcake in the melted chocolate to decorate them
