INGREDIENTS
- 40g unsalted butter, softened
- 225ml lukewarm whole milk
- 50ml lukewarm water
- 35g caster sugar
- 20g light brown soft sugar
- 7g sachet dried active yeast
- 550g plain flour
- 1½ tsp fine sea salt
- 2 ripe bananas, sliced
For the syrup
- 200g unsalted butter
- 200g light brown sugar
- 1 tsp ground cinnamon

Make the dough and leave to rise overnight in the fridge. Continue from step 3. Alternatively, freeze the loaf at the end of step 4. When ready to bake, defrost and prove as in step 5 before baking.
