1/2 cup butter softened
3oz cream cheese softened
1 egg separated into egg and yolk
1 tsp vanilla
1 tsp lemon zest
1/4 tsp salt
1 cup icing sugar (aka powdered sugar)
1 cup all purpose flour
1 cup graham wafer crumbs (I recommend you start with 1/2 cup and add more if you need more, I had lots left over with one cup)
1 can cherry pie filling (you will only use about 3/4 of the can)Cream together the butter, cream cheese, vanilla, egg yolk, lemon zest and vanilla together until creamy.
Blend in powdered sugar.
Blend in flour.
Chill dough for 2 hours in fridge or about 45 minutes in freezer.
Scoop out 2 tbsp portions and roll into 1 inch diameter balls.
Dip ball into egg whites (beaten until frothy) and then roll in the crumbs. Place on cookie sheet covered with a silicone mat or parchment paper.
Press thumb in center to make a depression.
Bake at 325 for about 15-20 minutes until bottoms are light brown and cookies are set.
Press the center lightly with the end of a wooden spoon as soon as they come out of the oven.
Allow to cool completely and fill centers with cherry pie filling.
Store covered in the refrigerator.
