Easy No-Bake Holiday Fruit Cake Recipe

Let’s face it, fruitcake is not exactly everyone’s favorite. They’re chewy and plasticky. Today, we’re going to change that. This recipe is perfect when you don’t really want to bake a cake and follow complicated instructions. Just mix everything together and you’re done. Enough to satisfy four people and you can always make more because it’s so easy.

 

I remember a party at a friend’s place and someone brought fruitcake. Nice guy but needless to say, his fruitcake was not the star of the party. With this recipe, you can modify the fruitcake to your liking or someone that you want to give it to. Try a different mix of dried fruit, add a bit of rum and brandy to spice it up, it’s up to you.

 

Ingredients for Easy No-Bake Holiday Fruit Cake

 

14 oz box of graham crackers or vanilla wafers (smashed)

3 cups of nuts (chopped)

4 cups of dried fruit (chopped)

½ cup milk

10 oz bag marshmallows

2 tablespoons cinnamon (optional)

 

How to Make Easy No-Bake Holiday Fruit Cake

 

In a large bowl, crush the graham crackers using a food processor or just simply your hands. Add in the nuts and the dried fruits to the bowl and mix to combine. If you like, add in the cinnamon. Set aside.

 

In a cooking pot, heat the milk over low heat. Add the marshmallow next and stir until it turns into a paste-like consistency (about 1-2 minutes). Once done, pour the marshmallow mixture into the crackers mixture and mix them thoroughly and completely. Prepare any kind of container and transfer the mixture and press them into a dense loaf. Put a cover and chill in the refrigerator overnight or at least for 3-4 hours. Enjoy.
