Ingredients for Green Matcha Cake 

 

For the Cake :

1 ½ cup plain flour 

 1 teaspoon baking powder 

 3 teaspoon matcha powder 

 4 eggs 

1 cup granulated sugar 

200 grams butter

 

For the filling:

4 egg whites 

1 ½ cup granulated sugar 

450 grams unsalted butter 

300 grams white chocolate, melted 

100 grams small chocolate chips 

 

How to Make Green Matcha Cake

 

Preheat your oven to 350 For 180 C degrees. Line with parchment paper square pan (11x11inch).

 

In a bowl, mix the butter and granulated sugar using a hand mixer. Add in the egg yolks and mix until combined. Add in milk and dry ingredients: flour, baking powder, and matcha powder. In a separate clean bowl, beat in the egg whites until stiff peak forms. With the help of a spatula, transfer the egg whites into the butter mixture and combine until fully incorporated. Spread the batter into a baking pan and bake for about 45 minutes or until a toothpick comes out clean. Let it cool completely and cut it in four equal sponge cakes. Set aside. 

 

To make the buttercream filling in a clean bowl beat in the egg whites alongside with granulated sugar. When stiff peaks form, slowly add in the softened butter and melted chocolate. Stir well and stir in the chocolate chips. 

 

Take one of the matcha sponge cakes and spread with ¼ of the buttercream filling. Repeat the same process until you build a square cake and decorate it with matcha macarons if desired and fresh strawberries.
