Dark Chocolate Peanut Butter Brownies
Servings: 24 2-inch Brownies
Ingredients
6 ounces unsalted butter (1-1/2 sticks)
4 ounces dark chocolate (I use 72% Belgium Chocolate)
½ cup creamy peanut butter plus ¼ cup for the swirl topping
2 cups granulated sugar
4 large eggs
1 ½ teaspoon vanilla extract
¾ cup all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
Cooking spray (I used coconut oil spray)
Powdered sugar for dusting the brownies
Directions
1. Preheat your oven to 350 degrees. Line a 13×9-inch baking pan with aluminium foil and spray the bottom and sides with cooking spray.
2. In a small bowl combine the flour, baking powder, and salt. Set aside.
3. Combine the butter and chocolate and melt over on top of a double boiler that’s on medium heat. Then add in ½ cup of the peanut butter and whisk until blended. Remove from heat.
4. Add the sugar to the chocolate peanut butter mixture and whisk until combined. Add the eggs one at a time, along with the vanilla extract, and whisk until completely incorporated. Finally add the flour mixture and whisk until all blended.
5. Pour the batter into your prepared pan. Place the ¼ cup of peanut butter into a microwave-safe bowl and microwave for about 10-15 seconds until softened. Then place dollops of peanut butter all around the batter and with a knife make a bunch of swirls into the batter.
6. Bake the brownies for about 25-30 minutes, or until a toothpick is inserted into the middle of the brownies and it comes out slightly fudgy. Remove from the oven and cool completely on a rack.
7. Remove the brownies with the aluminum foil and place onto a cutting board and with a serrated knife cut into 24 2-inch squares. Place the brownies onto your favorite platter and dust them with powdered sugar and enjoy the love! ☺
