How To Make These Berry And Pistachio Cupcakes

How delicious looking are these berry and pistaschio cupcakes ?, the combination of the berry with the nuts is so good

When I came across this recipe is was the amazing colour of the frosting that caught my eye although I do love pistachio nuts , the pale green colour from the nuts works so well with the pink

The nuts and berries work throughout the cupcake from the soft most sponge through to the wonderful creamy frosting a truly wonderful cupcake recipe

This recipe makes 12 large cupcakes

Ingredients

Cakes
– 210g butter
– 210g caster sugar
– 210g self raising flour
– 3 eggs
– 3 tbsp raspberry/strawberry fruit coulis
– 100g pistachios, finely chopped

Icing
– 150g butter
– 500g icing sugar
– 2-3 tbsp raspberry/strawberry fruit coulis
– Fresh fruit/chopped pistachios

Coulis
– 250g raspberries/strawberries (with tops removed)
– 1 tbsp icing sugar
– Juice of 1/2 a lemon
