Maple Cream Sauce:
4 oz cream cheese softened
1/4 maple syrup
1/2 cup powdered sugar
Whisk all ingredients together until smooth, add more icing sugar to get the thickness you prefer.
Pancakes:
1- 8oz package of cream cheese
2 cups Bisquick baking mix
1/2 cup graham wafer crumbs
1/4 cups sugar
1 cup milk
2 eggs
Slice the cream cheese block lengthways into four sticks, cover and freeze overnight, until frozen solid.
Chop frozen cream cheese into bite sized pieces.
In a large bowl, combine the baking mix, graham wafer crumbs and sugar. Add milk and eggs and stir until just combined (batter will be lumpy).
Add cream cheese pieces and stir.
Heat oil in skillet (medium heat) pour about 1/3 cup of the batter in the pan, spread into round shape with spoon.
Cook until edges start to look dry and bottom is brown, flip and cook on the other side until brown and center feels set.
If you have a large breakfast griddle, I recommend you make as many as possible at once. The cream cheese begins to melt, and the pieces get very small. The pancakes still taste awesome, but you won’t have nice bigger sized pieces of cream cheese in them.
Serve with the cream sauce over the top!
