Ingredients

  • For cake layers:

  • 1/2 cup melted butter

  • 3 large eggs

  • 1 1/2 teaspoons vanilla extract

  • 1 1/2 cups pure pumpkin puree

  • 1 1/2 cups white granulated sugar

  • 1 1/2 cups milk

  • 3 tablespoons instant coffee granules

  • 2 1/2 cups all-purpose flour

  • 3 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 tablespoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 1/4 teaspoon each: all-spice; salt

  • For Cream Cheese Frosting:

  • 8 ounces softened cream cheese

  • 1 cup, plus 1/4 cup, heavy cream

  • 1 1/2 cups confectioner’s sugar

  • 1 teaspoon vanilla extract

  • For garnish: toffee bits, chopped nuts, caramel bits, caramel sauce
