A really classic delicious cupcake recipe that I hope you all enjoy .. these cupcakes are great to make for that tea party as they have that wonderful classic taste about them
The soft moist sponge with a swirl of cream cheese frosting and sprinkles of your choice what could be better
Vanilla Cream Cheese Cupcakes
Ingredients
Cupcakes
110g /4oz / 2/3 cup self raising flour, sifted
110g /4oz /1/2 cup caster sugar (superfine) sugar
110g /4oz / 1/2 cup butter, softened
2 large eggs
1 tsp vanilla extract
To Decorate
110g/ 4oz / 1/2 cup cream cheese
55g/ 2oz /1/4 cup butter, softened
110g / 4oz /1 cups icing ( confectioner’s ) sugar
1 tbsp vanilla extract
sprinkles to decorate
- Prepare the oven to 190°C ( 170 °C fan ) 375F/ gas 5 and then line a 12 hole cupcake tin with paper cases
- Combine the flour, sugar, butter , vanilla extract and the eggs in a bowl and whisk together for about 2 minutes or until the mixture is smooth
- Divide the mixture evenly between the cake cases and then transfer to the oven and bake for 15-20 minutes
- Test them with a wooden toothpick , if it comes out clean then the cakes are cooked and are ready to come out of the oven
- Transfer the cupcakes onto a wire cooling rack to cool down
- Meanwhile place the cream cheese and butter for the frosting in a bowl and beat , gradually add the icing sugar ( confectioner’s) sugar and the vanilla extract beat until your frosting is smooth
- check that your cupcakes are cooled down place the frosting into a piping bag and pipe it onto your cupcakes a star nozzle is usually the best here
- finish of your cupcakes by decorating them with the sprinkles
