A great weekend bake are these chocolate almond cookies that are easy to make as the cookie dough is roll into a log shape and then cut to make each cookie

1 cup butter softened
1 cup white granulated sugar
1/2 tsp almond extract
1/2 tsp vanilla extract
2 cups all-purpose flour
1/2 cup ground almonds
1/4 tsp salt
2 oz semi sweet chocolate melted and cooled slightly
In a large bowl, combine the sugar and butter and cream together until light and fluffy (It’s so fluffy!)
Beat in almond and vanilla extract.
In a separate bowl combine the flour, ground almonds and salt.
Stir the dry ingredients into the creamed mixture in 2-3 additions.
Add in the melted chocolate and stir until combined.
***NOTES**** If you want smaller cookies than I made, divide your dough into two or three portions and roll into logs that are about 8 inches long. Wrap and refrigerate until firm, about 2 hours.
If you want the same sized cookies that I made, don’t divide the dough and roll it out into one log, 8 inches long.
You can hurry up the chilling process by putting the log(s) in the freezer for about 45 minutes.
Remove from plastic wrap and slice into 1/2 inch slices. Place on a parchment lined or silicone mat lined cookie sheet and bake for 10-12 minutes at 350F or until they are no longer shiny and firm to the touch. Cool completely.
Drizzle with melted chocolate and decorate with sliced almonds and cherries if desired
