Don’t you just love chocolate cupcakes with delicious butter cream piped on top ? , they are one of my favourites every time so here for you is a recipe that I love to make and will give you amazing results
A really great party cupcake that I am sure everyone will love
Chocolate Chip Buttercream Cupcakes
Ingredients
Cupcakes
110g /4oz / 2/3 cup self raising flour, sifted
110g /4oz /1/2 cup caster sugar (superfine) sugar
110g /4oz / 1/2 cup butter, softened
2 large eggs
2tbsp unsweetened cocoa powder
100g /31/2 oz / 2/3 cup dark chocolate chips
To decorate
100g / 3 1/2 oz / 1/2 cup butter softened
200g / 7oz / 2 cups icing ( confectioner’s ) sugar
1tsps unsweetened cocoa powder
mixed chocolate chips to decorate
White chocolate ,melted
- Prepare the oven to 190°C ( 170 °C fan ) 375F/ gas 5 and then line a 12 hole cupcake tin with paper cases
- Combine the flour, sugar, butter, eggs,cocoa powder and chocolate chips in a bowl and whisk together for about 2 minutes or until the mixture is smooth
- Divide the mixture evenly between the cake cases and then transfer to the oven and bake for 15-20 minutes
- Test them with a wooden toothpick , if it comes out clean then the cakes are cooked and are ready to come out of the oven
- Transfer the cupcakes onto a wire cooling rack to cool down
- Meanwhile place the butter for the frosting in a bowl and beat , gradually add the icing sugar ( confectioner’s) sugar and the cocoa powder beat until your frosting is smooth
- check that your cupcakes are cooled down place the frosting into a piping bag and pipe it onto your cupcakes a star nozzle is usually the best here
- Melt some white chocolate in a bowl on a low heat in the microwave or in a bowl over a pan of hot water on the stove , once melted drizzle over the cupcakes and then decorate with the mixed chocolate chips
