A Delicious Dessert …Crème brûlée

Crème brûlée is one of those desserts that is a wonderful dinner party dessert as it is delicate and creamy and finishes of that dinner party perfectly

It has that air of grandeur about it I think that is why it is in my top 3 desserts that I love

When starting out in catering this was one of the desserts that would often be serve at many dunner parties that I would cook for and I have any fond memories because of this


3 cups heavy  cream

6 egg yolks

1/3 cups Sugar

1 tsp Vanilla

1/3 cups light brown sugar



Heat the cream in a heavy saucepan just until bubbles form around the edge of the pan

With an electric mixer beat the yolks with the sugar until thick and light yellow , gradually stir into the cream

Place this mixture in a bowl over hot water and  cook this mixture until it start to thicken it should coat the back of a spoon .. this should take about 15 minutes

Add the vanilla and strain the custard into ramekin dishes,, refrigerate for about 8 hours good to do this overnight

Just before serving carefully place brown sugar over the surface of the Crème brûlée with with a cooks  blow torch or under the grill caramelize the sugar on the top this will form a sugary crust

You Are now ready to serve these delicious Crème brûlée
