Easy To Make Funfetti Cake Mix Cookies

These Funfetti Cake Mix Cookies are easy to make that even kids with supervision can make them. Serve them on birthdays or add them to your picnic foods. They could also fit any special occasion and holiday by replacing sprinkles with a different topping like a crushed candy cane for the Christmas season or M&M’s candies and chocolate chips for parties. 
 
I just love how versatile these cookies can be, and making an extra batch is not a problem because of the ready-made cake mix. The addition of cream cheese also helps these cookies stay moist. 
 

Ingredients 

 
8 tablespoons unsalted butter, melted

1 large egg, room temperature

1 teaspoon vanilla extract

4 ounces light cream cheese, softened

1 (15.25 oz) box Funfetti cake mix

2 tablespoons colored sprinkles + extra for garnishing
 

How to Make Funfetti Cake Mix Cookies

 
In an electric mixing bowl, beat melted butter, egg, vanilla, and cream cheese until well combined. Gradually add cake mix, and whisk until just combined and then mix sprinkles. Refrigerate cookie dough for one hour.
 
Preheat the oven to 350°F.  Scoop out cookie dough and roll it to your hands to form a ball. Place them into a baking sheet lined with parchment paper about two inches apart. Flatten the cookie dough balls into a disc-shape using the bottom of a measuring cup. Add the extra sprinkles on top of each cookie and lightly press again.
 
Bake for 9 minutes. Cookies should be creamy white and not brown. Let the cookies cool on the baking sheet for a few minutes and transfer them to a wire rack to cool completely. 
 
If stored in an airtight container, cookies can last for 4 to 5 days.
